Ground anise gives this soup the deliciously different flavor of licorice, and offers an innovative way to serve radishes.
4 tablespoons butter or margarine (divided)
7 cups sliced radishes
1/2 cup chopped onion
1/2 cup chopped celery
4 tablespoons cornstarch
3 cups milk
2 teaspoons ground anise
Salt and pepper to taste
- Melt 2 tablespoons of butter in a soup pot and saute radishes, onion and celery till translucent, about 4 minutes. Set aside.
- In another pan, melt remaining 2 tablespoons butter, add cornstarch and blend to a smooth paste. Add milk a little at a time, stirring until smooth and thickened.
- Blend vegetables in food processor and puree.
- Combine pureed vegetables and sauce back in soup pot. Add ground anise, salt and pepper. Reheat and serve warm.
