A few days ago we had a guest on the show who is eating nothing but 20 potatoes a day for 60 days to help spread the word on the nutritional value of potatoes.  His name is Chris Voigt and he represents the Washington State Potato Commission.  We will have him back on the show near the end of the 60 days to follow up.

Since the interview I have been craving potatoes and decided to make one of the easiest recipes for perparing nutritious yet great tasting potatoes.  Try it and remember that we always welcome your feedback.

Here is the recipe:

ITALIAN STUFFED POTATOES

 2                           5 oz potatoes, baked

1 1/2 oz               part-skim mozzarella cheese, grated

1/2 cup                vegetables, steamed

1/4 tsp                 basil

1/8 tsp                 oregano

Dash                    red pepper flakes

1.    Add basil, oregano, and red pepper flakes to steamed vegetables; mix well.

2.    Cut baked potato in half lengthwise and fluff with fork. Add vegetable mixture and sprinkle grated cheese on top.

3.    Bake in oven at 350° until cheese melts.

Serves 2

Calories per serving:              170

Protein:                                   5 gm

Carbohydrate:                         28 gm

Fat:                                         4 gm = 21%
