Another Benefit of Regular Exercise: Reduced Risk of Diabetes

The number of people with diabetes is on the rise in the United States. In the latest figures from the Centers for Disease Control and Prevention (CDC), diabetes is now the seventh leading cause of death in the country. It is also the leading cause of kidney failure, non-traumatic lower-limb amputations, and new cases of blindness among adults.

Diabetes is a disease defined by chronic high levels of glucose (sugar) in the blood. Technically named hyperglycemia, high blood sugar is the result of insufficient production or use of insulin by the body. Glucose levels rise and fall regularly, and temporary high glucose levels usually do not present a threat. However, chronically high glucose levels, if left untreated, can cause problems such as nerve damage, kidney or eye problems, heart disease, and stroke.

Regular exercise is helpful in the prevention of type 2 diabetes (also called adult-onset diabetes) by helping to improve the body’s use of insulin. Continuous exercise increases blood flow to the muscles causing them to absorb glucose at almost twenty times the normal rate, thus lowering the amount of glucose in the blood. In addition, regular exercise also helps to lower levels of triglycerides (fat) in the blood. High levels of triglycerides in the blood raise the risk of developing diabetes. Finally, regular exercise helps to maintain a healthy weight. One of the biggest risk factors for diabetes is being overweight;  weight loss and physical activity lower the risk of diabetes by improving the body’s ability to use insulin and process glucose.

The Diabetes Prevention Program (DPP), a large prevention study of people at high risk for diabetes, showed that lifestyle changes to lose weight and increase physical activity reduced the development of type 2 diabetes by 58% during a 3-year period. The DPP’s results demonstrate that high-risk people can delay or avoid developing type 2 diabetes by losing weight through regular physical activity in addition to consuming a diet low in fat and calories.

So there’s one more reason to feel good about exercising – you’re reducing your risk of developing adult onset diabetes.

In addition to the benefits of chickpeas this recipe provides other nutritious foods like tomatoes, garlic, onion and olive oil.  The pesto topping gives you the powerful anti-inflammatory and antioxidant benefits of basil while adding a rich flavor.  It is also packed with magnesium, a mineral that helps regulate blood sugar.

Ingredients:

1/2 medium onion diced
1 tablespoon olive oil
1 garlic clove minced
1 28 ounce can of fire roasted crushed tomatoes
1/3 cup of water
1 teaspoon sugar
1/2 teaspoon salt
black pepper to taste
1 15 ounce can of chickpeas drained and rinsed

In a pot, saute the onion in olive oil over medium heat until soft. Add minced garlic; cook 30 seconds. Add the fire-roasted crushed tomatoes and water; bring to a boil. Add the sugar, salt and black pepper.

If you like a smooth soup, puree mixture in a blender. Transfer back to pot. Add the chickpeas. Cover and simmer for 10 minutes. Top each serving with a dollop of jarred basil pesto or you can make your own pesto.

Freshly made pesto is a simple recipe made up of just a few ingredients.  Both basil and pine nuts each offer nutrional benefits, but that’s not all.  Olive oil is in our opinion the healthiest of fats offering many benefits including heart health.  Garlic supports your immune system and help keep cholesterol under control.  Basil provides antioxidant protecttion and anti-inflammatory effects while pine nuts are a high protein nut that come from pine cones.  They are an excellent source of vitamins B1 and B3, manganese, copper, magnesium, molybdenum, and  a very good source of zinc. Ingredients

2 cups packed fresh basil leaves
2 cloves garlic
1/4 cup pine nuts
2/3 cup extra-virgin olive oil, divided
Salt and freshly ground black pepper, to taste
1/2 cup freshly grated Pecorino cheese (see Cook’s note)

Directions

Combine the basil, garlic and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.

If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.

If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to three months. Thaw and stir in cheese.

Makes 1 cup.
